Peanut Flour Pancakes

These gluten-free pancakes have a wonderful texture and flavor. They are super-light and packed with a good amount of protein. Unleash the recipe of this new pancake for your family!

 Preparation Time 5 minutes


         For the peanut flour pancakes:   

  • ½ cup egg whites
  • 1 medium-sized ripe banana (mashed smooth)
  • 2 ½  tablespoons peanut flour
  • 1 tablespoon coconut flour
  • ¼ teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt

    For the peanut flour sauce:

  • 1 tablespoon peanut flour
  • 1 teaspoon maple syrup
  • 1 tablespoon almond milk (or any other flavor of your choice)


  • Spray a nonstick pan with nonstick cooking spray and turn the heat to medium.
  • Add egg whites, coconut flour, peanut flour, cinnamon, baking powder, and salt in a bowl to mix. 
  • Add and whisk mashed banana until a smooth mixture.
  • Divide and transfer batter to pan into equal 4 portions using a measuring cup to have 4 pancakes. Cook these pancakes at a lower heat for a longer time. 
  • Cook the first slide for about 8-10 minutes and carefully flip (make sure the pancake is fully set before flipping). 
  • Cook on the second side for about 5-8 minutes or until both sides attain a nice golden brown color.

How to Serve

  • Serve pancakes in beautiful plates with drizzled peanut flour sauce over it. Enjoy with banana slices and/or fresh blueberries!
