• Sieve flour, ginger, cinnamon and salt together, add sugar.
  • Melt margarine, then add syrup and mix together (mixture should only be moderately hot).
  • Beat eggs lightly.
  • Add melted mixture to dry ingredients in two lots, next add lightly beaten eggs and finally bicarbonate of soda dissolved in warm water, beat until mixture is smooth between each addition.
  • Bake in greased tin in a oven at 200C/Gas Mark 6 for approximately 3/4 hour.
